Cocoa Powder is the product resulting from the process of fermenting, drying, roasting, and grinding the beans into powder. Rhubee's Cocoa Powder is natural which is considered a healthier alternative to "dutched" cocoa. In the "dutching" process the beans are washed with a potassium solution to neutralize the natural acidity of the beans but lose about half of their phytonutrients in the process.
